This course provides an in-depth study of food science and nutrition and its application within professional fields. Students will be required to provide ingredients for demanding practical tasks on a regular basis. The course requires enthusiasm, hard work and the ability to work independently.
Unit 1 Mandatory (completed in 1st Year)
Meeting Nutritional Needs of Specific Groups (Internal & External Assessment)

The external assessment is a 90 minute exam (plus 15 mins reading time)

The internal assessment is a piece of controlled assessment linked to nutritional planning.

Students learn about nutrients, relationship between nutrition and health and develop skills of nutritional planning for groups.
Unit 2- Mandatory (Completed in 2nd year)
Ensuring Food is Safe to Eat (External)

This is set on 1st March by the exam board and is completed in 8 hours supervised time

Students will develop an understanding of hazard, risk assessment, and inputting controls to minimize these risks
Unit 3- Optional (Completed in 2nd year)
Experimenting to solve Food Production Problems

This is an internally assessed controlled assessment project

This looks at the chemical and functional properties of ingredients and understand the changes these undergo when cooked.

Current Issues in Food Science and Nutrition

Students will learn to plan, carry out and present a research project on current issues linked to food science and nutrition from the view of a consumer, manufacturer or policy making perspective.
